These cool-season favourites perform best in full sun to light shade with well-drained, fertile soil. Sow them in raised beds, rows, or containers; provide even moisture and a light mulch to keep roots cool.

History and Historical Uses

  • Salad Mix: A blend of baby lettuces and leaf lettuces, long used in Mediterranean table gardens.

  • Kale Mix: Heirloom and modern cultivars prized since the Middle Ages for cold-hardiness and nutrient density.

  • Arugula: Ancient Roman favourite for its peppery leaves in salads and as a digestive tonic.

  • Spacing: Thin to 4–8 in apart, depending on variety.

  • Maintenance: Keep evenly moist; fertilise lightly with compost tea.

  • Harvest: Snip outer leaves when young and tender; cut baby greens at soil level for salad mix.

  • Isolation: Space varieties at least 3 ft apart to prevent cross-pollination.

  • Collection: Let a few plants bolt and produce seed stalks; harvest mature seeds when pods are dry.
