Green Tomatillo is a productive annual known for its heavy crop of pale green fruit enclosed in delicate, papery husks. Each tomatillo has a distinctive tangy, lemon-like flavour, making them a staple ingredient in traditional Mexican green salsa (salsa verde). The fruit also adds delicious zest when eaten fresh in salads and omelettes, or cooked in sauces and preserves. Growing on compact bushes approximately 50cm tall, Green Tomatillos are perfect for container gardening and smaller spaces.

Where Can You Grow Green Tomatillo?
Green Tomatillo grows best in Zones 4-9, thriving in full sun and fertile, well-drained soil. It performs particularly well in warm, sheltered locations or greenhouses.

History and Historical Uses
Originating in Mexico, tomatillos have been cultivated since ancient times, forming a core part of traditional Mexican cuisine. Historically valued for their tart, refreshing flavour, tomatillos are essential for authentic salsa verde and numerous other dishes across Central and South America.

Canadian Zone Information
Zones 8-9: Direct sow seeds outdoors after the last frost, or start indoors earlier for a longer season.
Zones 5-7: Start seeds indoors 6-8 weeks before last frost; transplant outside when weather warms.
Zones 4: Best grown in greenhouses or large patio containers; start seeds indoors early.

How to Grow and Harvest Green Tomatillo

  • Planting: Sow seeds 6mm (¼in) deep, spaced 45-60cm (18-24in) apart.
  • Watering: Maintain consistent moisture, especially during fruit development.
  • Support: Plants benefit from staking or support due to heavy fruit loads.
  • Harvesting: Pick fruit when husks are filled out, dry, and papery.
  • Storage: Tomatillos keep for several weeks in a cool, dry location.

Seed Saving Tips for Future Supply

  • Choose Best Fruits: Select mature, fully ripe fruits from healthy plants.
  • Extract Seeds: Remove seeds from fruit pulp and rinse thoroughly.
  • Dry Completely: Spread seeds on paper towel or screens to fully dry.
  • Store: Place seeds in an airtight container; store in a cool, dark location. Seeds remain viable up to 5 years.
