Perennial fennel is a tall, elegant herb that adds beauty, fragrance, and culinary versatility to the garden. With its soft, feathery foliage and sweet anise aroma, it’s equally at home in ornamental beds, herb gardens, or naturalised spaces. The young stems and leaves are delicious added fresh to salads, while the seeds and flowers are also edible and useful in herbal teas and cooking. A magnet for pollinators, this plant makes a lovely and useful addition to any garden.

Where Can You Grow Perennial Fennel?
Thrives in Zones 5–9, preferring full sun and well-drained soil. It is drought-tolerant once established and grows well in garden beds, perennial borders, or herb gardens.

History and Historical Uses
Native to the Mediterranean, fennel has long been valued for its culinary and medicinal uses. In Ancient Greece and Rome, it symbolised courage and strength and was widely used to aid digestion. Over time, it became a staple in herb gardens across Europe and beyond, used for everything from flavouring fish to making herbal remedies.

Canadian Zone Information
Zones 8–9: Direct sow in spring or autumn; plant will thrive and overwinter well.
Zones 5–7: Start indoors or direct sow after last frost; mulch in late autumn to protect roots.

How to Grow and Harvest Perennial Fennel

Planting: Sow seeds 6mm (¼in) deep, spaced 30–45cm (12–18in) apart in well-drained soil.
Watering: Keep soil moderately moist until established, then water sparingly.
Harvesting: Snip young leaves and stems as needed. Seeds can be collected once flower heads brown.
Maintenance: Cut back in late fall to encourage fresh spring growth.

Seed Saving Tips for Future Supply

Allow to Flower: Let some plants develop seed heads in late summer.
Collect Seeds: Once flower heads dry, cut and gently shake to release seeds.
Dry and Store: Ensure seeds are fully dry before storing in airtight containers.
Viability: Seeds remain viable for 3–4 years when stored in cool, dry conditions.
