  • Zones 8-9: Sow seeds in early spring or late summer for successive harvests.
  • Zones 5-7: Plant seeds in late spring for a fall and winter harvest.

How to Grow and Harvest Carrots

  1. Planting: Sow seeds 1cm (0.5in) deep in rows spaced 30cm (12in) apart. Thin seedlings to 5-8cm (2-3in) apart once established.
  2. Watering: Keep soil evenly moist for uniform root development.
  3. Harvesting: Harvest when roots reach the desired size or leave them in the ground over winter for enhanced sweetness. Protect tops with mulch to prevent frost damage.

Seed Saving Tips for Future Supply

  1. Allow Plants to Flower: Carrots are biennial, so let some plants overwinter and flower in the second year.
  2. Harvest Seeds: Once the flower heads dry and turn brown, cut them and place them in a paper bag to collect seeds.
  3. Dry and Clean: Spread seeds on a towel to dry completely. Separate seeds from any debris.
  4. Store: Store seeds in an airtight container in a cool, dark place. Properly stored seeds remain viable for up to 3 years.
